Hello MC I just found the story about the bakery in Normandy , what fun ! I would love to visit that place . I ,like yourself have a real passion for baking breads. I bake about 3 times a week and sourdough is a mainstay though I’m always trying new. I found the story about Dado,s in Chicago as well and tried the pita breads this evening for new years supper, I have not had much luck with pitas before this one but they blew up like wow and tasted great. We just relocated to a new home in the south of the U.S. The back yard had a big stone chimney that must have been some old homesteads fireplace , the building was gone but the chimney stood there waiting for me ! We built a wood fired bread oven and that chimney is the smoke stack. That’s what intrigued me about the co pains in Normandy , my oven is bigger than I need and takes a while to heat up. I think the bread trough might help me to ready enough dough to be more efficient and have a few to sell around the neighborhood. I like the simple dump it in recipes , that’s how I cook most dishes & its fun to see someone is in business using that method. Sorry I’m rambling , I just wanted to make contact with you and tell you we enjoy this site so much . You are top shelf. Thank you.
